Shawarma, is a tasty alternative to the traditional kebab, served with toppings like tahini, tabbouleh, and hummus. It is a dish in Middle Eastern cuisine consisting of meat cut into thin slices, stacked in a cone-like shape, and roasted on a slowly-turning vertical rotisserie or spit
Ingredients for 4 persons:
Chicken fillet (150 g): 4 pieces
Coriander powder: 2 tbsp. coffee
Garlic clove : 2 pieces
Cumin powder: 2 tbsp. coffee
Cayenne pepper: 1 tsp. coffee
Smoked paprika: 1 tbsp. coffee
Fine salt: 4 pinches
Pepper mill: 4 turns
Lemon juice: 4 tbsp. coffee
Olive oil: 2 cl
For the sauce:
Greek yogurt : 250 g
Garlic clove: 1 piece
Cumin powder: 2 tbsp. coffee
Lemon juice: 2 tbsp. coffee
Fine salt: 2 pinches
Pepper mill: 2 turns
Iceberg salad: 0.5 piece
For garnish:
Red onion: 1 piece
Cucumber: 0.5 piece
Fresh coriander: 0.5 bunch
Lemon juice: 3 tbsp. coffee
Olive oil: 2 tbsp. soup
Fine salt: 4 pinches
Pepper mill: 4 turns
For dressage
Pita bread: 4 pieces
DESCRIPTION OF THE RECIPE

FOR THE PREPATION OF THE CHICKEN
Put all the marinade ingredients in a freezer bag. Place the chicken in the bag. Close and shake to soak them well. Let sit in the fridge.

FOR THE SAUCE
Peel the garlic, degerm it and grate it.
Mix the ingredients for the yoghurt sauce in a bowl, wrap and place in the fridge until ready to serve.
- FOR THE SALAD
Wash the salad and cut it into a chiffonade.
Peel the cucumber, remove the seeds and cut it into small cubes.Peel and finely chop the red onion. Wash and chop the cilantro. Mix all the salad ingredients and season with olive oil and lemon juice.

FOR COOKING
Heat a large grill pan. Cook the chicken cutlets until they take a nice color on both sides.
Place as you go on a large plate and cover with aluminum foil to keep them warm.
Cut the cutlets into slices.

FOR ASSEMBLY
Cut the pita bread in half and flatten them.
Fill with salad, chicken slices and add 1 tbsp of sauce.
Roll up the shawarma and wrap in a sheet of baking paper.
