Fried Rice Mauritius

The fried rice is one of the most popular dishes in Mauritius. Easy to cook, tasty and colourful. It is part of everyday life, and it can be enjoyed on the go either on the street stalls or in snacks and restaurants around this island. Originally from China, fried rice has found its place in the creole cuisine and is now a dish transformed in the Mauritian style.

Here is the recipe of Mauritian fried rice serving 4 people. This dish is easy to make and can usually be done in about 45 minutes. This dish is a real change of scenery that will bring a reminiscence of asian influences. The classic version is composed of a variety of vegetables such as carrots, green beans, mushrooms, chicken and a large egg omelette. However, our recipe is in a more Mauritian style!

The Recipe

Ingredients

– 3 cups of basmati rice

– Water

– 500g chicken breast

– 3 large eggs

– 250g green beans

– 250g Mushrooms

– 3 medium carrots

– 2 garlic cloves

– 1 piece of ginger

– 30g butter

– Sunflower oil

– Olive oil

– Thick soy sauce

– Light soy sauce (Kikkoman brand)

– Salt and pepper

The Preparation

Peel and wash the carrots, garlic and ginger. Brush the mushrooms to clean it it. Slice the chicken breast, carrots, green beans, mushrooms and chop the garlic and ginger.

–          Cooking your rice

Wash rice three times and put in a “rice cooker” (special unit for cooking rice) with 5 glasses of water, and allow to cook. If you don’t have a rice cooker you can cook it in a pressure cooker for 20 minutes or you can simply cook it on the stove – but be careful – check frequently if its al dente.

–          Cooking the Chicken

In a medium skillet heat the sunflower oil and add the minced chicken, half of the chopped garlic, ginger, salt and pepper. Add some thick soy sauce to the chicken and. Cook over low heat for 5 minutes. Note that you can also add prawns to your fried rice, prepare it the same way you prepare the chicken. (Chicken can be replaced with fish fillets or meat)

–          Cooking the vegetables and eggs

In another large skillet heat the olive oil, butter square and add carrots, green beans, remaining garlic, salt and pepper.

Cook the vegetables for 2 minutes – since they are very thin, they will cook very quickly. Put aside in a large dish after cooking.

Heat a butter square and sizzle the mushrooms sprinkled with salt and pepper in it.

Break the eggs into a bowl and beat them. Heat some sunflower oil, add the beaten egg, salt and make a thin omelette. Remove, allow to cool and cut into strips.

Wipe the remaining oil in the pan with a paper towel.

–          The final step

Heat the pan, add some sunflower oil, add half the rice and pepper and stir gently. Put a tea spoon of clear soy sauce, mix well then add a teaspoon og thick soy sauce and cook for 1 full minute keeping on stirring constantly.

Add half of the chicken and vegetables, mix gently and cook for 1 minute.

Stir the egg strips and mix with other foods.

Then store the whole in a large pot and repeat for the other half of rice, vegetables and chicken.

To accompany this Fried rice why not prepare a small tomato salad with coriander and chili.
