Barfi Recipe Mauritius

Ingredients:

  • 1/3 cup Ghee, or Brown Butter
  • 1 cup Whole Milk
  • 3 cups Milk Powder
  • 3/4 cup Fine sugar
  • 1/4 tsp Cardamom powder
  • Almonds or Badam Chopped for garnish

Step 1

Heat ghee in a pan till it melts and becomes light golden in color.

Then add some whole milk and bring it to boil on low flame do not stop to stir to prevent the milk from burning at the bottom.

The milk will start bubbling once you see this, add the milk powder in increments of 3/4 cup and keep on whisking to avoid it from making lumps.

Let it stir on low flame for 2 to 3 minutes.

Step 2

Mix everything together after adding sugar. Do not stop stirring on low flame for exactly 10 minutes. The mixture must form like a ball or dough and ghee starts separating from the pan.

Mix and switch off the flame you may add cardamom powder before.

Step 3

Put this mixture in a greased plate or pan. 

Garnish with ingredients that you want and press gently with spatula. Leave for 1 1/2 to 2 hours.

Cut them into desired shape once they are set.

Your Milk Burfis or Barfis are now ready. Store in air tight container for 5 days.
